PROFESSIONAL DEVELOPMENT

  • Paulina Abascal inspired by bread and pastry, at the age of seven, took her first steps towards the profession that would become her specialty
  • She studied Hotel business administration in Mexico and took several courses specializing in pastry and chocolate at Lenôtre school in Paris
  • She competed representing Mexico at the World Pastry Cup in France, in 2001
  • For 12 years she worked at Trico, one of the best mexican bakery´s, creating the Pauline line and building a great image of quality and attention to detail
  • She worked at El Globo pastry shops, as brand director for their Balance line
  • She is an ambassador of Mexican pastry arts throughout the world. Paulina has served desserts to his holiness Pope Benedict XVI and to Mexico’s elite wich include Carlos Slim’s wedding in 2010. Additionally she has been invited as a judge in many national and international pastry competitions

AWARDS AND RECOGNITION

  • She has received several recognitions throughout the years, among them, the Barbie Award for her career as one of Mexico’s top female entrepreneurs, the Universal Excelence Award, and Médaille d’Or Académie Culinaire de France. She is a member of the Académie since 2004
  • She´s part of Enrique Olvera’s Mexican Chef’s Collective, working on several social causes related to food arts
  • The national press considers Paulina one of Mexico’s top ten chefs
  • She was named prodigious women by Elisabeth Sandager – Helena Rubinstein Global Brand President

MEDIA PRESENCE

  • With almost twenty years of experience, she is well known internationally for her strong media presence, four books with multiple editions, two international awards, and the best selling pastry book edited by Larousse
  • In 2006 she started her own tv show in Latin America’s Gourmet Channel. She is the longest running star in the Channel. The tv show is also broadcasted in the United States through Univision

BRAND SPOKESPERSON

  • She was Nestlé Professional’s dairy line spokesperson for three years
  • Currently she is the ambassador for Cacao Barry’s, Cremería Americana, and Nespresso
  • She has a highly successful pastry shop named “Dulces Besos”
  • She has different products in “The Glass House Café”, the showroom of the St. Regis Hotel in Mexico City, classified as one of the best hotels in the world
  • She sells exclusive kitchen appliances in Liverpool (department store)
